Tequila Lime Chicken Grain Bowl

My Go-To Summer Dish

This tequila lime chicken grain bowl is the perfect dish for summer, and so easy to prepare ahead. The tequila lime marinade is fresh, tart, a tad smoky and sweet. The bowl combines the tequila lime marinated chicken, sauteed veggies, lettuce and brown rice with your favorite toppings! It took me about 1 hour to prepare and I have lunch for the week. Bonus: you can find whatever veggies are in season at your local farmers market.

Ingredient List

  • Tequila Lime chicken (recipe below)
  • Sauteed veggies
  • Cooked Whole grain (I used brown rice cooked in the instant pot)
  • Lettuce
  • Toppings such as: Sour cream, avocado, scallion, cilantro, lime wedge, diced tomato, salsa, chipotle mayo

Tequila lime chicken

Method

Mix all the marinade ingredients island then place in a ziplock bag. Add chicken breasts and let sit for about an hour. 

Heat stove top or grill and remove chicken from marinade. Cook the chicken on both sides until browned and cooked through to 165 degrees. If on grill, brush with marinade as it cooks. Heat the remaining marinade separately in a saucepan until it simmers for at least 5 minutes. 

If in a skillet, sear on medium heat in a bit of oil, browning both sides of the chicken. Reduce the heat, add remaining marinade and cover until cooked through about 10 minutes. 

Ingredients

  • Juice of 1 lime
  • 4 tbsp tequila
  • 2 tbsp honey
  • 2 tbsp olive oil
  • 1 tsp chipotle powder or adobo sauce
  • 1/2 tsp habanero or cayenne powder
  • 2 tsp guajillo powder
  • Salt and pepper
  • 3 chicken breasts

Tequila Lime Chicken Ingredients

Brown Rice:

I cooked my brown rice in the instant pot according to directions with chicken stock. Before I added the stock I used the sautee setting to saute red onion and jalapeno. I added the rice, a bit of salt and the stock and set to cook.


Mixed Sauteed Veggies:

I used red onion, red bell pepper and squash from the farmers’ market. Sauteed with garlic, salt and pepper in olive oil. You can use any veggies!


Chipotle mayo:

Add chipotle adobo sauce to mayonnaise and add a squeeze of lime.


To assemble the grain bowl:

Place the cooked grain in the bowl

Now top it with sliced chicken, sauteed veggies, lettuce or greens, and any toppings you like!

Other ideas:

Make it a breakfast bowl by adding an egg and omitting the chicken, make it grain free by using the lettuce as a wrap.
