Easy Steak Fajita Tacos

a delicious weeknight or any night meal

Who doesn’t love tacos?? This steak taco recipe works perfectly for a quick & easy weeknight dinner, but it’s also a little bit fancy so you can impress your family or friends! We use the classic fajitas ingredients of beef, peppers, and onion (tempeh would be a great vegetarian alternative!), and we’ll also show you an easy, secret tip to make your steak tacos extra delicious. 

Ingredients:

Ingredients (makes 2-3 tacos)

Garlic (approximately 3 cloves, or to taste)

1 tablespoon chili guajillo powder

1/2 teaspoon cumin

Salt

Cooking oil

1/2 lb beef, sliced

1/2 onion (red or white)

1 bell pepper (red or green)

optional: 1 jalapeño (if you like spicy!)

1 C grated cheese

2 T crema or sour cream

4-6 corn tortillas

Recommended garnishes: cilantro, lime, avocado, salsa verde

Method:

Mince the garlic. Then add garlic, chili guajillo, cumin, and a generous pinch of salt to the beef.  Mix so that the beef is evenly coated in spices.

Start heating two skillets with a little oil. Slice the peppers and onion into thin strips.

Cook the vegetables in one skillet and the beef in the other one. They take approximately the same amount of time to cook! Wait until the vegetables start to caramelize to add some salt (a pinch, or more to taste).

While the vegetables and steak are cooking, mix half of the grated cheese with the crema.

When the beef is done, transfer to a plate or bowl. Leave the skillet on the stove, but turn down the heat to low.

Begin assembling tacos! Each taco will have a double layer of tortillas. Here’s our secret tip: between the two tortillas, add a bit of cheese! This tastes delicious, and helps prevent the tortillas from breaking. Top with the sour cream & cheese mixture. 

Put the tortillas in the skillet over low heat so that the cheese can melt (be careful not to burn the tortillas!). Top with beef and vegetables.

Remove from heat. Garnish to your heart’s content! We like to use a bit of cilantro, lime juice, avocados, and/or salsa. Enjoy!
