
Best Banana Bread
This banana bread recipe is foolproof and you can add your own flair! It is my go to recipe for brunch, a potluck or dessert. Add some nuts or toffee. How about a coconut lime glaze? Anything goes. This recipe is worth memorizing, you will use it so much. I got this recipe from the original Moosewood cookbook years ago, and it is the best banana bread recipe I have tried yet.
Dry Ingredients:
2 cups flour
1 tsp salt
2 tsp baking powder
Wet Ingredients:
3 mashed, ripe bananas
3 tbsp yogurt, milk or buttermilk, or sour cream
1 tsp vanilla
2 eggs
1 stick butter softened
3/4 cup brown sugar
Optional add-ins:
chocolate chips
peanut butter chips
dried cranberries
coconut flakes
pecans
Method:
Preheat oven to 350 degrees F.
Grease a loaf pan
Mix together dry ingredients in one bowl.
In another bowl, beat together butter and sugar until fluffy, about 2 minutes
Add in banana and beat until well mixed
Add eggs, vanilla, milk and mix until incorporated.
Add dry ingredients to wet and mix until just blended-don’t over mix.
Stir in any add-ins, plunk in loaf pan and bake about 50-55 minutes, testing for doneness by inserting a knife and making sure it comes out “clean”.
